Ingredients:
- 2 lbs Lamb stew meat, cut into 1-inch cubes
- 2 tbsp Olive oil
- 1 large Onion, chopped
- 2 Carrots, peeled and chopped
- 2 Celery stalks, chopped
- 3 cloves Garlic, minced
- 4 cups Beef broth
- 1 cup Guinness stout (optional, but highly recommended!)
- 1 tbsp Tomato paste
- 1 tsp Dried thyme
- 1/2 tsp Dried rosemary
- 2 lbs Potatoes, peeled and quartered
- 1 lb Turnips, peeled and cubed (optional)
- Salt and pepper to taste

Instructions:
- Season the lamb stew meat generously with salt and pepper.
- Heat the olive oil in a large Dutch oven or heavy pot over medium-high heat. Brown the lamb in batches, being careful not to overcrowd the pot. Remove the lamb and set aside.
- Add the onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes. Add the garlic and cook for another minute until fragrant.
- Stir in the tomato paste, thyme, and rosemary. Cook for 1 minute more.
