once upon a chef pulled pork

Ah, you want to see a movie, eh? Good, good. I have just the one for you. A little small, maybe you haven’t heard of it, but trust me, it has the heart. Like good bowl of noodle soup on a cold night. This one, “Once.” So simple, so beautiful.

Once (2006)

This movie, it’s a little treasure. Like finding jade pendant in the dirt. Not shiny or fancy, but worth much, much more. Two people, lost and lonely, find each other through music. They make magic together, even if just for a short time. It’s about dreams, and maybe never catching them, but still trying. Ah, makes the heart ache in a good way, you know? Like missing your grandma’s cooking when you are far from home.

Once (2006) Movie PosterNow, watching this movie, it make me think of simple things, good things. Like making congee. So easy, but so comforting. Here, I tell you how to make it. My own family recipe, passed down for generations. (Okay, maybe just two generations, but still!)

Congee Recipe

Ingredients:

  • 1 cup white rice (long grain, like jasmine, works best)
  • 8 cups chicken broth (you can use water, but chicken broth is *much* better, like adding MSG to everything!)
  • 1 inch ginger, peeled and thinly sliced
  • 2 cloves garlic, minced
  • 1/2 cup shredded cooked chicken (optional, but I like it. Like adding extra toppings to your boba.)
  • Salt and pepper to taste
  • Garnish (optional): Green onions, fried shallots, sesame oil, soy sauce, chili oil, cilantro. The more, the better! Like a buffet of flavor!)

Instructions:

  1. First, rinse the rice. This gets rid of the extra starch, so your congee isn’t too sticky. Like washing the dust off your fortune cat for good luck.
  2. In a large pot, combine the rice, chicken broth, ginger, and garlic. Bring it to a boil over high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for at least 1 hour, or until the rice is very soft and the congee has thickened. Stir it occasionally, especially in the beginning, so the rice doesn’t stick to the bottom of the pot. Like keeping an eye on the steam buns so they don’t burn.
  4. After an hour, check the consistency. It should be thick and creamy. If it’s still too watery, cook it for longer. If it’s too thick, add a little more chicken broth or water. Ah, cooking is all about feeling, you know? Like knowing when the tea is just right.
  5. Stir in the shredded chicken (if using) and season with salt and pepper to taste.
  6. Serve hot, garnished with your favorite toppings. I like green onions, fried shallots, a drizzle of sesame oil, and a little soy sauce. Like decorating the New Year cake with candied fruits.
  7. Eat slowly and enjoy! This congee is good for the soul. Just like “Once” is good for the soul. Both simple, both comforting, both make you feel a little bit better about the world.

See? Simple, just like the movie. Now, go watch “Once”, then make congee. You thank me later. Maybe you even write me a thank you note, like old times! And don’t forget to share the congee with your family and friends. Sharing is caring, like giving red envelopes during Lunar New Year. It brings good luck and good fortune! Now go! Shoo! Enjoy!
