Ingredients:

  • 2 lbs beef stew meat, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped

  • 4 cups beef broth
  • 1 cup Guinness stout (optional, but highly recommended!)
  • 1 lb potatoes, peeled and cubed

  • 1/2 teaspoon dried rosemary

Instructions:

  2. Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Brown the beef cubes in batches, being careful not to overcrowd the pot. Remove the browned beef and set aside.
  3. Add the chopped onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
  4. Pour in the beef broth and Guinness stout (if using), scraping the bottom of the pot to loosen any browned bits. This adds a ton of flavor!
  5. Return the browned beef to the pot. Add the potatoes, parsnips (if using), bay leaves, thyme, and rosemary. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for at least 2 hours, or until the beef is very tender. The longer it simmers, the richer the flavor will be.
  6. Remove the bay leaves before serving. Taste and adjust seasoning with salt and pepper as needed.
  7. Garnish with fresh parsley before serving.
