Recipe: Simple & Delicious Stir-Fry (Like Mama Used To Make!)

Ingredients:

  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces (or tofu for the vegetarians! We love everyone!)
  • 1 tablespoon soy sauce (low sodium, because we’re watching our salt intake, eh?)
  • 1 teaspoon cornstarch (for that nice, silky texture)
  • 1 tablespoon vegetable oil (or peanut oil, if you want that extra nutty flavor)
  • 1 onion, thinly sliced (don’t cry, it’s almost over!)
  • 2 cloves garlic, minced (the more garlic, the better! Keeps the vampires away!)
  • 1 inch ginger, grated (fresh ginger is key, no excuses!)
  • 1 red bell pepper, sliced (for the color! Food needs to look pretty!)
  • 1 green bell pepper, sliced (more color! We’re going for a masterpiece here!)
  • 1 cup broccoli florets (healthy is important, you know!)
  • 1/4 cup chicken broth (or vegetable broth, for the tofu folks)

Instructions:

  1. First, marinate the chicken (or tofu!) with the soy sauce and cornstarch. Let it sit for at least 15 minutes. This helps keep the meat tender and juicy, like a baby’s cheek!
  2. While the chicken is marinating, prepare all your vegetables. Chopping everything beforehand makes cooking so much easier. Trust me on this one!
  3. Heat the oil in a large wok or skillet over high heat. Get it nice and hot!
  4. Add the chicken (or tofu!) and stir-fry until browned and cooked through. Don’t overcrowd the pan, or it will steam instead of stir-fry. We want that beautiful browning!
  5. Remove the chicken from the pan and set aside.
  6. Add the onion, garlic, and ginger to the pan and stir-fry until fragrant, about 1 minute. Mmm, the smell is heavenly!

  8. Return the chicken to the pan.
  9. Add the chicken broth and oyster sauce (if using) and bring to a simmer.
  10. Cook until the sauce has thickened slightly, about 1-2 minutes.
  11. Serve over cooked rice and garnish with sesame seeds.
