This creamy, dreamy potato salad has a little bit of everything. Sweet corn, spicy chili, tangy lime, and, of course, perfectly cooked potatoes. It’s the perfect side dish for your next BBQ, potluck, or just a lazy summer dinner on the patio. And the best part? It’s actually super easy to make! Seriously, even my brother who burns water could probably make this. Okay, maybe not burn water, but you get the picture.

  • 2 pounds Yukon Gold potatoes, cubed and boiled until tender
  • 2 ears of corn, grilled or boiled and kernels removed (about 2 cups)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup crumbled cotija cheese
  • 1/4 cup chopped cilantro
  • 2 tablespoons lime juice
  • 1 tablespoon chili powder

Instructions:

  1. First things first, you gotta cook the potatoes. Boil them in salted water until they’re nice and tender, but not mushy. Nobody likes mushy potatoes! Drain them really well and let them cool down a bit.
  2. While the potatoes are cooling, get your corn ready. Grill it for that smoky flavor (so yum!), or just boil it. Then, cut those kernels off the cob like a pro.
  3. Now for the dressing! In a big bowl (because this is a BIG flavor salad!), whisk together the mayonnaise, sour cream, cotija cheese, cilantro, lime juice, chili powder, and garlic powder. Taste it and adjust the seasonings to your liking. More lime? More chili? You do you, boo!
  4. Gently fold in the cooled potatoes and corn into the dressing. Make sure everything is coated evenly. We want every bite to be a flavor explosion!
  5. If you’re feeling brave, add a little bit of diced jalapeno for some heat. But be careful! A little goes a long way.
